Antioxidant Salad with Mānuka Honey and Herb Dressing

Prep Time , Serves 2-6.


  • 120g baby spinach leaves
  • Thinly sliced red onion as desired
  • 100g goat cheese, sliced
  • 1 cup blueberries
  • 6-8 strawberries, sliced
  • 8-10 blackberries
  • 1/2 cup raw walnuts

Herb Dressing

  • 60ml good quality Olive Oil
  • 1 tablespoon Taylor Pass UMF5+ Mānuka Honey
  • Juice of 1 lemon
  • 1 garlic clove, finely diced
  • Large handful fresh basil
  • Handful fresh mint


  1. Place all the dressing ingredients into a small jug and use a hand blender to blitz until smooth. Taste and season well.

  2. Spread the baby spinach out on a large platter. Top with the red onion and goat cheese. Add the blueberries, strawberries and blackberries. Add the walnuts and drizzle generously with the herb dressing.
