Mānuka Honey, Berry and Greek Yoghurt Parfait
Prep Time , Serves 1 (with leftover berry coulis).
A simple bit of luxury to brighten up your morning. Make the berries the day before if possible.
Ingredients
- 1 cup Greek yoghurt
- 1 tablespoon Taylor Pass Mānuka Blend honey
- 1 cup of your favourite granola or muesli (we used a cacao granola)
Berry Coulis
- 2 cups frozen organic mixed berries
- 1 tablespoon Taylor Pass Mānuka Blend honey
To serve:
- Additional honey for drizzling, dried edible flowers (optional)
Instructions
- Place the berries in a medium saucepan along with the honey.
- Add 1 tablespoon of water. Bring to a boil and then simmer for 7-10 minutes until glossy and reduced. Place in the fridge to cool completely.
- Combine the yoghurt with the honey and mix well.
- Use a glass or medium sized jar to layer the parfait. Start with 1/3 of the granola. Top with a spoonful of yoghurt, followed by a good dollop of the berry coulis.
- Repeat this again.
- Finish the parfait by adding a final layer of granola, a dollop of yoghurt, a good drizzle of honey, a small spoonful of the berries and a few dried edible flowers if using. Ideally serve within 1 hour.
