Taylor Pass Honey Baked Oats with Banana and Blueberries

Prep Time , Cook Time , Serves 4.

Ingredients

  • 2 cups Harroways wholegrain oats
  • ½ cup walnuts, roughly chopped
  • 1/3 cup Taylor Pass Creamed Clover Honey
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 teaspoons vanilla essence
  • 2 free range eggs, lightly whisked
  • 1 cup coconut milk
  • 2 medium ripe bananas, sliced
  • 1 cup frozen or fresh blueberries

Instructions

  1. Preheat oven to 180 degrees Celsius.
  2. Combine all the ingredients (except bananas and blueberries) in a bowl and mix well.
  3. Grease an oven-proof dish. We’ve used a 21cm cast-iron skillet.
  4. Pour in half of the oat mixture and spread out evenly. Tile this with ½ of the banana slices and sprinkle over ½ of the blueberries. Spoon the remaining oats on top, spread out and layer the remaining bananas and blueberries on top. Press the blueberries lightly into the surface.
  5. Bake for 35-45 minutes until lightly golden. Let sit for 15 minutes before serving with cream, coconut cream or yoghurt.
