Taylor Pass Honey Baked Oats with Banana and Blueberries

Ingredients
- 2 cups Harroways wholegrain oats
- ½ cup walnuts, roughly chopped
- 1/3 cup Taylor Pass Creamed Clover Honey
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 2 teaspoons vanilla essence
- 2 free range eggs, lightly whisked
- 1 cup coconut milk
- 2 medium ripe bananas, sliced
- 1 cup frozen or fresh blueberries
Instructions
- Preheat oven to 180 degrees Celsius.
- Combine all the ingredients (except bananas and blueberries) in a bowl and mix well.
- Grease an oven-proof dish. We’ve used a 21cm cast-iron skillet.
- Pour in half of the oat mixture and spread out evenly. Tile this with ½ of the banana slices and sprinkle over ½ of the blueberries. Spoon the remaining oats on top, spread out and layer the remaining bananas and blueberries on top. Press the blueberries lightly into the surface.
- Bake for 35-45 minutes until lightly golden. Let sit for 15 minutes before serving with cream, coconut cream or yoghurt.
